Pandan & Coconut Jelly (Thach La Dua & Nuoc Dua)



The weather has been quite hot around here, I decided to make some Vietnamese Jelly for my family.  This pandan-coconut jelly (thach la dua & nuoc dua) is super simple to make and very refreshing on a hot summer day.

 
Ingredients

 

1 bag of agar-agar powder
2 cups of coconut milk
2 cups of sugar
6 cups of water
1/2 teaspoon of pandan syrup

 

Cooking Method

In a pot, combine ½ the packet of agar-agar powder, 2 cups of coconut milk, 2 cups of water and 1 cup of sugar.  Mix well.  Stir it constantly until boil. 

 

Pour it into a mold (baking pan, cake pan), then put it in the fridge to let it cool down and start to firm.  Wait for 10 minutes, the top of the coconut jelly should not be too firm and should still be sticky.

 
For the pandan mixture, combine ½ the packet of agar-agar powder, 4 cups of water, ½ teaspoon of pandan syrup and 1 cup of sugar.  Mix well.  Stir it constantly until boil. Pour pandan mixture on top of the coconut jelly in the mold.  Refrigerate for about 2 hours.  Then cut and serve.

   

 
 

  

 

TIP:  This is a great dessert to bring to a house party/dinner with friends and family.
