The
weather has been quite hot around here, I decided to make some Vietnamese Jelly
for my family. This pandan-coconut jelly
(thach la dua & nuoc dua) is super simple to make and very refreshing on a hot summer day.
Ingredients
1 bag of agar-agar powder
2 cups of coconut milk
2 cups of sugar
6 cups of water
1/2 teaspoon of pandan syrup
Cooking Method
In
a pot, combine ½ the packet of agar-agar powder, 2 cups of coconut milk, 2 cups
of water and 1 cup of sugar. Mix
well. Stir it constantly until
boil.
For
the pandan mixture, combine ½ the packet of agar-agar powder, 4 cups of water, ½
teaspoon of pandan syrup and 1 cup of sugar.
Mix well. Stir it constantly
until boil. Pour pandan mixture on top of the coconut jelly in the
mold. Refrigerate for about 2 hours. Then cut and serve.
TIP: This is a great dessert to bring to a house
party/dinner with friends and family.
