Fresh Watermelon Jelly (Thach Dua Hau)



My family loves watermelon.  I purchased a big watermelon and was able to use it to make fresh watermelon jelly, watermelon juice and had some left just for eating.  Here is my recipe for fresh watermelon jelly.  The watermelon was so sweet no sugar needed for both the jelly and the juice.

  

Ingredients


1/2 bag of agar-agar powder
4 cups of watermelon juice



Cooking Method

 

Cut the watermelon into pieces and use the juicer to extract the watermelon juice.  If you do not have a juicer, you can also put the watermelon pieces into the blender and strain out the pieces through a strainer.
 
In a pot, combine ½ the packet of agar-agar powder and 4 cups of watermelon juice.  You could add a few drops of red food coloring if you want the jelly to have a deep red color.  Mix well and stir it constantly until boiling. 

Pour it into a mold (baking pan, cake pan, silicon shape trays). Refrigerate for about 2 hours.  Then cut and serve.

 


 

TIP:  This is a great snack for the family without adding any extra sugar.
